Instructions.

Tools Needed

  • Scissors, paper

Prep in Advance

  • Sketch ideas / cut headdress / cut sombrero and mustache (optional, but it will make it fun!). click here to access the cutouts and worksheet.

  • Review gallery and ideas

  • Gather embellishments (options and not included) - gems, pom poms, pipe cleaner, feathers, buttons, foil and more.

  • If you didn’t buy the kits with the royal icing included, see below for the recipe to make in advance.

Get Ready to Decorate

  • Remember: NON-EDIBLE!!

  • Prep your work area and place paper/cover the surface.

  • Prepare the icing packs. The icing is made in advance and there may be some settling. Squish and move back and forth with your fingers to re-mix well.

  • Cut the tip of your icing packet straight across.

  • REMEMBER: Only cut off a small part of the tip of your icing packet. You can always cut more, you can’t go back.

  • Unpack your sugar skull.

  • Gather your prep work (sketches, headdresses, embellishments).

  • Use the icing as your “glue” when adding embellishments or the headdress.

  • Ready to decorate - Have FUN!!

Royal Icing Recipe.

Yield: This 2 lb. mix recipe will yield 5 color piping bags and decorate approximately 4 sugar skulls (varies on use). 

Ingredients:

  • 2/3 cup water

  • ½ cup meringue powder

  • 2 lbs powdered sugar

  • Gel food coloring

Tools:

  • Hand mixer or electric mixer (recommended)

  • Large mixing bowl.

  • Silicon baking spatula (optional)

Instructions:

Option A - (divide batch to make 5 color options):

Mix your dry ingredients (sugar and meringue powder) in the large mixing bowl. Add in the water.  Mix on med/high for 9 minutes.  This mix should be a little firm as it will thin out more when you add the food color.  Divide the mixture into 5 bowls and add your desired gel food color, mix well.  At this point either fill the piping bags right away or store in an airtight container (cover with saran wrap before placing lid to ensure it is airtight).  Store at room temperature.  Use within 7 days.  There will also be some settling, so when you are ready to use, gently move around the icing to remix.

Option B - (batch is for only one color): Note difference in water/food coloring mix.

Same as above.  Please note that when measuring your water, the 2/3 measurement also includes the gel food color (as to not thin the icing).  Add to dry mix.  No need to separate into 5 bowls when mixed.

Piping Bags: 

Disposable piping bags work best.  However, you can utilize the next best thing which is ziplock bags (sandwich size). Tie off with thick rubber bands.
